I was walking through the grocery store this morning with the beautiful music of my toddler singing, “Mommy, avocado, avocado!!” She knows my weekly ritual of standing at the produce table picking through the plethora of Avocados From Mexico, trying to find the perfect batch to bring home. Avocados are one of our favorite fruits (I had no idea they were a fruit either) and the convenience of having fresh Hass avocados year-round makes this a staple food in our family diet, and my go-to gem when hosting a mommy playdate. Ingredients:
- 4 ripe Avocados From Mexico halved, pitted and peeled
- 1 tbsp lime juice freshly squeezed
- 1 tbsp onion minced
- 1 tsp jalapeño pepper
- 1/4 tsp salt
Instructions:

Ingredients:
- 1/2 cup mashed Avocado From Mexico (1 medium 6-8 oz. avocado before pitting)
- 1/2 cup mashed banana (1 medium banana)
- 1/2 cup cocoa powder
- 1 teaspoon vanilla extract
- 3/4 cup rolled or instant oats
- 1/4 cup creamy peanut butter
- 1-2 tablespoons honey or maple syrup, optional (depending on how sweet your banana and avocado are)
