I was walking through the grocery store this morning with the beautiful music of my toddler singing, “Mommy, avocado, avocado!!” She knows my weekly ritual of standing at the produce table picking through the plethora of Avocados From Mexico, trying to find the perfect batch to bring home. Avocados are one of our favorite fruits (I had no idea they were a fruit either) and the convenience of having fresh Hass avocados year-round makes this a staple food in our family diet, and my go-to gem when hosting a mommy playdate. A good avocado toast must always make an appearance, and kids thrive off the extra vitamins and fiber when you toss some avocado into a smoothie before playtime.

It’s a great feeling to embrace dietary fat and have bonding moments with your little ones in the kitchen. Here are some of our best-loved recipes using Avocados From Mexico.

Classic Mexican Guacamole

Ingredients:

  • 4 ripe Avocados From Mexico halved, pitted and peeled
  • 1 tbsp lime juice freshly squeezed
  • 1 tbsp onion minced
  • 1 tsp jalapeño pepper
  • 1/4 tsp salt

Instructions:

In a small bowl, mash the avocado with a fork…
…and make it slightly chunky.
Add fresh lime juice!
Add onion, jalapeño and salt.

Enjoy!!!!

 

Mozzarella, Guacamole, and Pesto Melt

Ingredients:

  • 4 pieces multi-grain bread
  • 3 slices mozzarella
  • 2 tbsp store bought pesto
  • 3 slices fresh basil

Instructions:

Spread guacamole made with Avocados From Mexico on two pieces multi-grain bread. Add, mozzarella, pesto and fresh basil.
Top with two more slices of bread and press lightly to compress.
Heat sandwiches in large non-stick pan over medium heat until both sides are crispy and golden. Serve warm and enjoy.

 

Chocolate Avocado Energy Bites

Ingredients:

  • 1/2 cup mashed Avocado From Mexico (1 medium 6-8 oz. avocado before pitting)
  • 1/2 cup mashed banana (1 medium banana)

  • 1/2 cup cocoa powder

  • 1 teaspoon vanilla extract
  • 3/4 cup rolled or instant oats
  • 1/4 cup creamy peanut butter
  • 1-2 tablespoons honey or maple syrup, optional (depending on how sweet your banana and avocado are)

Instructions:

Mix all ingredients except for the honey in a bowl with a spoon until fully combined and smooth. Taste, then adjust sweetness with honey to your desired level.
I mean, avocados and chocolate!!! Can this get any better?!!
Using a spoon and wax paper, scoop and roll the mix into one dozen balls the size of a truffle, placing on wax paper on top of a plate.
Freeze the energy bites for at least two hours, then store in a freezer bag, ready to grab when you need a quick snack. They will keep in the freezer for three months.
