If you’ve ever taken a trip to one of our local you-pick blueberry farms (and if you haven’t, what are you waiting for?), then you know it’s one of spring’s sweetest traditions. From farms in Callahan to St. Augustine and everywhere in between, we are spoiled with blueberry abundance.

But let’s be honest — after the muffins, pancakes, smoothies, and maybe a pie or two… the question becomes: What else can I do with all these blueberries?!

As a foodie and mom who loves a good kitchen experiment, I’ve had a little too much fun this season coming up with creative ways to use these juicy blue gems. So whether you’re a kitchen pro, Violet Beauregarde, or just trying to keep your kids from shoving blueberries up their nostrils (don’t ask), here are some outside-the-box blueberry recipes that will make you fall in love with blueberries all over again.

Quick Refrigerator Pickled Blueberries

Sweet, tangy, and spiced with champagne vinegar, star anise, ginger, cinnamon, and citrus — these are not your grandma’s pickles. They’re amazing on a cheese board, tossed into a salad, or spooned over grilled chicken. Bonus: They last for weeks in the fridge, unless you keep “taste testing” like I do.

Blueberry Compound Butter

Whip softened butter with mashed blueberries and a touch of honey or sea salt. Spread on sourdough, pancakes, or pair it with a charcuterie board. It’s fancy and effortless — the best combo for tired moms who still want to impress.

Edible Blueberry Finger Paint

Mash or blend blueberries and mix with cornstarch or Greek yogurt for an all-natural, toddler-friendly finger paint. Great for little artists and even better for moms who like a mess they don’t have to panic about.
