Tonight it was the secret ingredient in my taco bowls, and y’all… it’s so good! Here’s how I made it.
You can use almost any veggies in this dish, but I like onions and peppers. You can use fresh ingredients, dicing everything bite-sized, or opt for frozen chopped onions and peppers as a timesaver. For protein, I used organic ground chicken and pinto beans.
For the sauce, you can take a shortcut here and use a big jar of taco sauce, or a simple tomato sauce with your own seasonings. It’s delicious either way. And, of course, that magical chicken bouillon cube and a cup of hot water brings everything together perfectly.
The Perfect Taco Bowl
Ingredients:
1 onion, diced
1 red pepper, diced
1 jalapeño, diced (seeds removed)
1 yellow bell pepper, diced
1 red bell pepper, diced
1 green bell pepper, diced
4 cloves garlic, minced
1 15-oz. can pinto beans, rinsed
1 lb. ground chicken
2 tbsp. extra virgin olive oil
1 packet taco seasoning
1 cup tomato sauce
1 Massel chicken bouillon cube, mixed with 1 cup hot water
Salt & pepper to taste

Instructions:
Heat a pan to medium-high heat, and drizzle with olive oil. Add the chicken to the pan and top with the taco seasoning. Mix everything together with a wooden spoon, breaking apart the meat as the seasonings mix in and it cooks.
When the meat is almost browned and cooked through, add your veggies. Cook until the meat is browned and cooked through, and the veggies are tender.
Add in the garlic and pinto beans. Sautee for about 3–5 minutes, stirring occasionally. Then, add the tomato sauce and Massel broth. Reduce heat to low, cover and simmer for 10 minutes.
Serve with toppings like cilantro, sour cream, avocado, cheese, tortilla chips, or lime wedges.
